Measuring cocoa butter in a recipe

Cocoa butter is the fat ingredient, not an equal-spoon replacement for cocoa powder. The pure fat reference provides 884 kcal and 100 g fat per 100 g. A weighed 5 g adds about 44 kcal and 2.99 g saturated fat, so even a small recipe addition is easier to calculate by weight.

Its share of a recipe

Add 20 g cocoa butter to a dessert divided into four equal servings and the butter contributes about 177 kcal in total. Each serving receives one quarter of that contribution: 44 kcal and about 3 g saturated fat. Sugar, cocoa powder, flour and other ingredients are additional. If a substantial amount remains in the mould, the full amount added is not necessarily the amount eaten.

How much is a tablespoon?

The USDA tablespoon weighs 13.6 g and provides about 120 kcal. Solid pieces packed into a spoon may not match the same spoon filled with melted fat. Weighing 5 or 10 g is more repeatable for small recipes. A weighed 10 g provides 88 kcal and 5.97 g saturated fat.

Cocoa butter, powder and chocolate

Pure cocoa butter supplies the fat component, without the fiber and protein of cocoa powder. Chocolate combines cocoa components with ingredients that may include sugar or milk, depending on the product. Replacing cocoa powder gram for gram with cocoa butter changes both the nutrition calculation and the ingredient's function.

A label may also list cocoa mass. For example, Malty hazelnut-cocoa bites contain 12% cocoa mass, equivalent to 2.4 g in a 20 g portion. That amount is not all cocoa butter or all cocoa powder.

Choosing a food product

For cooking, choose cocoa butter sold as food. A skincare cream or scented cosmetic mixture is not the food described here. Check whether the pack contains pure cocoa butter or a blend with other fats; calculate a blend from its own label.
