Calories in ground pistachios

Pure ground raw, unsalted pistachio kernels provide 560 kcal per 100 g. A weighed 10 g topping gives 56 kcal, 2.02 g protein and 1.06 g fibre. Grinding does not by itself reduce the energy in the same weight of nuts.

Divide the pistachios between recipe portions

If a dessert contains 40 g ground pistachios and makes four equal portions, each receives 56 kcal from pistachios alone. Milk, sugar, pastry and oil add their own energy. A 20 g topping provides 112 kcal; calling it a garnish does not make the amount negligible. Distribute the topping evenly if you want an equal calculation for each portion.

Adding 10 g ground pistachios to 150 g plain whole-milk yogurt makes a bowl of about 148 kcal and 7.22 g protein. Spreading the nuts across the surface distributes a small amount through the bowl; honey or other additions change the total again.

Tablespoons and kernel counts

Fine powder and coarsely chopped kernels settle differently in a spoon, and packing them down can increase the weight. Use a weighed amount instead of assigning every spoonful or nut count the same number. A 30 g serving gives 168 kcal, but 30 individual kernels do not necessarily weigh 30 g. Remove the shells before weighing if you grind pistachios at home.

Are pistachio flour, paste and cream equivalent?

Pistachio flour may mean finely ground whole kernels or a product with some fat removed; check the ingredients and nutrition panel. A paste made only from pistachios also differs from a cream containing added sugar, milk powder or oil. Replacing ground kernels with sweetened cream changes the recipe's sugar and fat as well as its texture.

Source note: Values use USDA SR28 record 12151 for raw pistachios, on an edible, kernel-only basis. They are retained for grinding without additions and should not be transferred to roasted, salted or mixed products.
