Dietitian's Tips for Consuming Hazelnut Almond Biscotti

Hazelnut and almond biscotti are baked again after slicing to give them a crisp texture. In this recipe, a 30 g slice provides about 112 kcal. Two slices of that weight total 60 g and about 225 kcal.

How large is one biscotti?

Slice thickness matters: a 20 g slice provides 75 kcal, while a 30 g slice provides 112 kcal. The reference’s 60 g portion contains 4.83 g protein and 2.23 g fibre. If packaged or homemade slices weigh differently, the same number of pieces is not the same serving.

The butter hazelnut cookie example provides about 159 kcal at the same 30 g weight. Comparing that with this biscotti’s 112 kcal uses equal weights, not an assumed equal size per biscuit.

Why bake them twice?

The recipe combines hazelnuts and almonds with flour, sugar, butter, eggs, baking powder and lemon zest. The dough is first baked in logs, then sliced and returned to the oven. The second bake develops the crisp texture. Nuts in the recipe do not make the biscuits sugar-free or fat-free.

Mastic hazelnut cookies use wholewheat flour, whereas almonds and a second bake shape this biscotti’s texture. Changing flour or baking method requires a recipe-specific calculation.
