About 481 kcal in 175 g

This sour yuvalama example combines bulgur dumplings, beef and chickpeas. A 175 g serving provides about 481 kcal, 15.85 g protein and 39.56 g carbohydrate. A larger 250 g portion reaches about 687 kcal. These portions include the cooking liquid as well as the meat and dumplings.

A different dish from yogurt-based yuvalama

The small dumplings in the source recipe are made with bulgur, flour and egg. Fatty beef, cooked chickpeas, onion, garlic, tomato and pepper paste, olive oil and dried mint complete the dish. This version contains neither yogurt nor rice, so a yogurt-based yuvalama recipe needs its own calculation.

Rice-based sour meatballs are another preparation, with minced-beef meatballs and a yogurt dressing. The shared sour flavour does not establish identical ingredients or calories.

A bowl contains more than broth

Bulgur and chickpeas contribute carbohydrate, while the beef contributes protein and fat. With the recipe's olive oil included, the 175 g serving contains about 29.50 g fat. Bread or rice served on the side adds to the meal. A ladle rich in meat and dumplings may also have a different composition from a broth-heavy ladle of the same weight.

The plain cooked-bulgur table describes the grain alone. It cannot represent this complete dish of flour-and-egg dumplings, beef, chickpeas and oil.
