Superfresh puff pastry: count dough and filling separately

The selected supplier label for the plain frozen 1 kg pack declares 344 kcal per 100 grams. These figures describe dough before baking, rather than a cheese-filled pastry, dessert or Gurme variety. Use your own pack declaration when it differs. [1]

How many calories are in one sheet?

Sheet weight can vary. A weighed 50 g piece of dough provides 172 kcal; 100 g provides 344 kcal. Do not assume every sheet weighs 50 g. The full 1 kg pack contains 3440 kcal, a recipe total rather than a suggested serving. Cutting a recipe into a certain number of pieces does not establish the weight of each one.

The reference sheet of thin phyllo weighs 19 g; that measure does not carry over to a puff-pastry sheet. When changing doughs, use weighed grams and each dough’s own panel rather than equal sheet counts.

How do you calculate a filled pastry?

Count the dough, cheese and any egg wash separately. Baking removes water, so 100 g of finished pastry is not equivalent to 100 g of unbaked dough. For equal pieces, divide the recipe's total energy by the number made. Unequal pieces require the finished batch weight and the amount eaten. An oven or air fryer does not remove fat already present in the dough. For example, the finished-product calculation for a filled croissant shows why a product with filling already included cannot be compared directly with dough alone.

Fat, salt and ingredients

A 50 g amount supplies 9 g fat, 6.5 g saturated fat and 19 g carbohydrate. Its 0.45 g salt corresponds to about 180 mg sodium. The ingredient list includes wheat flour and vegetable margarine; plain puff pastry does not necessarily mean butter pastry. Gluten and soy are declared allergens. Fibre is unreported, rather than assumed to be zero.

The margarine already in the dough is included in this pack’s total. A separate weighed industrial-margarine calculation applies to fat actually added to homemade dough; it should not be counted a second time in ready-made pastry. The margarine brand used in this dough is not specified.

Why do online labels differ?

Migros lists 344 kcal whereas Şok lists 359.4 kcal, with different fat and carbohydrate figures. This calculator follows the complete Migros declaration for the 1 kg product without mixing the two. Follow the instructions on your pack: the selected listing gives around 25 minutes in a 180 °C oven. Filling and oven performance affect the result. [2]
