Industrial margarine does not have one universal recipe. This calculation uses Orkide Börek, a named bakery margarine for pastry: about 74 calories per 10 g or 148 per 20 g.

Its contribution to a pastry

Adding 100 g to a recipe contributes 739 calories. If that amount is shared equally between eight portions, each receives about 92 calories and 10.25 g fat from the margarine alone. Flour, cheese, meat and sugar must be counted separately. A 100 g portion of finished pastry is not equivalent to 100 g of its baking fat.

Fat is already included in the nutrition panel for ready-made puff pastry; seeing margarine in its ingredients is not a reason to add this example’s calories again. Margarine weighed into homemade dough is counted separately. The yeasted dill-and-cheese pogaca recipe also includes dough fat alongside flour and the cheese filling; its fat is not assumed to be Orkide.

Saturated and trans fat

10 g provides 8.2 g fat, including 5 g saturated fat. The catalogue reports trans fat below 1 g per 100 g, which is not an exact zero. Substituting the same weight of another margarine or butter does not guarantee an identical energy or fatty-acid profile.
