Portions of Daphne Gold caramel couverture

A 20 g amount of Daphne Gold caramel couverture provides 115 kcal and 7.32 g fat. A melted drizzle can be harder to judge by eye than a solid piece. Weigh the chocolate before melting it and account for any coating left in the bowl.

Chocolate on each slice of cake

If 100 g of couverture is used entirely on a cake cut into ten equal slices, each slice receives 10 g of chocolate, about 57 kcal. Using the whole 200 g reference pack doubles the chocolate contribution to about 115 kcal per slice. Chocolate left in the mixing bowl is not part of the cake unless it is also eaten.

Adding cream changes the calculation

Melted chocolate alone and chocolate mixed with cream or butter do not have the same composition. Add the values for all ingredients in the finished sauce, then calculate the share eaten. A 20 g spoonful of prepared sauce cannot automatically be logged as 20 g of pure couverture.

The strawberry chocolate fondue example includes chocolate, cream, syrup and fruit in one recipe. A sauce made with caramel couverture changes those ingredients and needs its own calculation.

Gold couverture versus chocolate chips

At equal 10 g weights, the Gold reference supplies about 57 kcal, Daphne dark chips about 51 kcal and two-colour chips about 54 kcal. Their flavour and behaviour in a recipe may differ even at the same weight. The caramel name does not quantify sugar, and the couverture name does not supply a verified cocoa-butter percentage.

The Kenton dark-couverture panel gives about 105 kcal per 20 g, compared with 115 kcal for the same amount of the Gold caramel reference. Use the values of the actual chocolate added to the recipe.
