The calculation here is for Kenton Tatlı Şefi dark couverture in the 200 g pack. Per 100 g, it provides 527 kcal, 45 g sugars and 21 g saturated fat. A weighed 20 g amount supplies about 105 kcal, 9 g sugars and 4.2 g saturated fat. The white couverture version requires its own panel.

Calculate the chocolate in each dessert serving

Using 40 g couverture in a dessert divided into four equal servings gives 10 g chocolate per serving. That contributes about 53 kcal, 4.5 g sugars and 2.1 g saturated fat. Cream, butter, flour and fruit count separately. The entire 200 g pack provides 1,054 kcal; pack size is not a serving recommendation. Melting the chocolate without adding ingredients does not change the total being counted.

At the same 10 g weight, Ülker dark chocolate chips contain 4.9 g sugars, compared with 4.5 g in this Kenton couverture. Chip or tablet shape alone does not establish sugar content.

In Kenton chocolate sauce prepared with milk, 20 g contains about 26 kcal and 3.6 g sugars. Milk is already part of that sauce; those figures do not describe 20 g of melted couverture.

The Daphne Gold caramel-couverture reference supplies about 115 kcal per 20 g, compared with about 105 kcal for Kenton dark couverture. The comparison is limited to equal-weight energy; it does not establish identical sugars.

What does 55% cocoa mean?

The supplier declares at least 55% cocoa dry matter. This does not mean that 55% of the chocolate is cocoa butter: the ingredients include both cocoa mass and cocoa butter. Sugar is the first ingredient. Dark chocolate is not automatically sugar-free or equivalent to a product with a higher cocoa percentage; use this panel for the amount going into your recipe.

Melting and checking the package

For a water bath, break the chocolate into small pieces, keep the bowl above the water and prevent water or steam from entering the chocolate. The supplier's method also adds some chopped chocolate after removing the melted chocolate from the heat. Count those pieces in the recipe's total chocolate weight. Trace warnings include milk, hazelnuts, pistachios, almonds, peanuts, sesame and gluten; the word dark does not establish allergen safety.
