Dry mix and a baked slice have different values

This page uses Dr. Oetker’s Turkish 450 g Sade plain cake mix as a named example. The dry mix provides 335 calories per 100 g, or 168 calories per 50 g. Those weights do not describe cake straight from the oven. Adding eggs, milk, sugar and fat changes both the total energy and the amount of cake you make.

Calculating a baked slice

The manufacturer’s separate prepared-cake panel gives 366 calories per 100 g. A weighed 50 g slice made as directed supplies 183 calories, 25.5 g carbohydrate, 2.9 g protein and 7.5 g fat. A 75 g slice supplies about 275 calories. Cutting the same cake into more slices reduces the amount per slice, not the energy in the whole cake.

If you change the sugar or fat in the recipe, the prepared panel no longer describes your cake exactly. Calculate the ingredients you actually use, then divide by the finished cake’s weight. Baking removes water, so the raw batter weight should not stand in for the baked weight.

A 50 g slice of prepared plain cake with 20 g chocolate sauce made with milk gives about 211 kcal: 183 from the cake and 28.2 from the sauce. Homemade chocolate and walnut cake has a separate recipe with walnuts, oil and chocolate as well as flour; the plain-mix panel does not describe that slice.

Check when sugar is added

The plain mix lists wheat flour, raising agents and salt. Sugar is added during preparation. The dry product declares 1.2 g total sugars per 100 g, compared with 27 g per 100 g of cake made as directed. The low sugar amount in the powder therefore does not describe the finished slice.

The 450 g box tells you how much dry mix it contains. It does not establish the baked cake’s weight or the number of servings. Use the appropriate pack’s nutrition panel for a chocolate, lemon or other cake mix.

Source note: dry and prepared columns from the manufacturer’s Sade plain cake mix page are kept separate. This page’s main table is dry mix, with 70 g carbohydrate, 9.9 g protein and 0.8 g fat per 100 g. This current named example is not a shared panel for every Dr. Oetker cake mix or earlier formula. Fibre and undeclared micronutrients remain unknown.
