Calories in one walnut kalburabastı

A finished piece weighing 40 g provides about 186 kcal in the reference recipe. A larger 60 g piece provides 279 kcal. A single calorie figure cannot describe every piece size. Weigh the pastry after baking and soaking in syrup, rather than weighing the raw dough.

Walnut filling, pastry and syrup

Kalburabastı is a ridged pastry with walnut filling, baked and then soaked in syrup. The reference dough includes flour, semolina, butter, olive oil and milk. The finished dessert supplies 465 kcal, 51.7 g carbohydrate and 26.4 g fat per 100 g. Its walnut filling does not make the whole dessert nutritionally equivalent to plain walnuts.

Two pieces and serving additions

If two pieces weigh 80 g together, they provide about 372 kcal. Two larger 60 g pieces weigh 120 g and provide roughly 558 kcal. Weigh clotted cream or ice cream separately and use its own nutrition profile. Cutting the same amount of dessert into smaller pieces does not change its total energy.

For an equal-weight comparison, 40 g of the Safranbolu walnut baklava reference provides about 180 kcal, while 40 g of the kalburabastı example provides 186 kcal. The six-calorie difference is not a universal ranking of recipes; a change in piece weight can make a larger difference.

Why homemade versions differ

The amount of ground walnut filling, fat in the dough and syrup absorbed by the pastry varies between recipes. Counting all leftover syrup as eaten can overestimate a portion, while counting only the dry pastry misses the syrup that was absorbed. For your own recipe, establish the ingredients, the syrup that will be consumed and the cooled edible weight. Use the specific package label for a purchased product.

Source note: The archived table for Lokma's original 2019 recipe gives 464.9 kcal per 100 g. A redesigned page lists water and macronutrients that exceed 100 g under the same heading, so that contradictory table was excluded. The older profile is an explicitly historical recipe estimate. Sugars and saturated fat are unreported; vitamin A without a defined RE/RAE basis was not converted.
