What counts as walnut butter?

The reference is a spread made only from roasted walnuts. A weighed 15 g portion of the KruKam example provides about 97 kcal and 2.4 g protein. The Turkish name ceviz ezmesi can also describe a Burdur confection made with walnuts, semolina and sugar; that dessert has a different composition.

Does no added sugar mean zero sugar?

No. The producer states that no sugar is added, while the walnuts' naturally occurring sugars contribute 2.2 g per 100 g, or about 0.33 g in 15 g spread. Honey, syrup or sugar changes both the ingredients and the nutrition panel. A walnut picture on the jar does not establish a one-ingredient product: some spreads also contain cashews or other nuts.

Weigh the amount on your bread

A thin layer weighed at 10 g gives approximately 65 kcal; 30 g gives 194 kcal. A full spoon does not have a universal weight. 40 g walnut bread with 15 g plain walnut butter provides about 200 kcal and 5.21 g protein. Put the bread on a scale, tare it, then add the spread to see the amount used. Oil that separates on top remains part of the product, and the producer advises stirring it back in. Pouring it away changes the mixture.

Beyond sweet toppings

Stir plain walnut butter into yogurt, spread it on bread or use it as the walnut ingredient in a sauce. Count added honey separately if making a sweet mixture. Walnut oil does not provide the same fibre and protein as the spread, so equal weights are not nutritionally interchangeable. No-added-sugar wording does not make a walnut product suitable for someone with a walnut allergy.

Source note: The KruKam 100% roasted walnut spread label declares 645 kcal per 100 g and 0.004 g salt, equivalent to 1.6 mg sodium. Incorrect retailer unit transcriptions were excluded. Unreported micronutrients and cholesterol remain unknown.
