Calories in Circassian chicken

The calories in Circassian chicken depend on the proportions of walnuts, bread, oil and chicken. The table describes Panayir Gourmet's defined prepared recipe: 105 kcal and 14.9 g protein per 100 g. A small 50 g mezze portion gives about 53 kcal, while 150 g gives 158 kcal. Those figures do not apply to every homemade version.

Why the walnut sauce changes the calculation

Walnuts, bread, milk and oil added to the chicken change the dish's total energy. Increasing walnuts or oil means the chicken meat's own nutrient table cannot describe the finished food. For a homemade recipe, add each ingredient's contribution, weigh the finished dish, then divide total energy by its final weight in grams and multiply by 100. If using boiled breast at home, calculate its cooked, skinless and boneless weight with the matching record rather than a raw fillet weight. Added water can increase weight without increasing the recipe's total energy.

Portions on a mezze table

The full 300 g container provides approximately 315 kcal and 44.7 g protein. Six equal mezze shares weigh 50 g each; dividing it between two people gives 150 g each. Weigh the bread slices eaten alongside; other mezze and extra oil also need to be counted separately from the prepared product. Serving cherry tomatoes beside it and scooping it up with bread create different plates.

Yogurt versions, allergens and storage

The reference ingredients are chicken fillet, salt, garlic, white pepper, walnuts, toast bread, milk and olive oil. Milk, walnuts and gluten-containing bread are actual ingredients. A homemade yogurt version or another product with mayonnaise needs its own calculation. Follow the manufacturer's 0–4 °C storage range and the package's consumption instructions.

The chicken salad with dill and yogurt example contains yogurt and a little mayonnaise in its dressing. The figures for this walnut, milk and bread product do not transfer to that mixture.

Source note: Values follow the Panayir Gourmet product table per 100 g, without averaging different recipes. Salt, fibre and total sugars are not declared. Vitamin A in IU was not converted to RAE without knowing its forms. Missing values were not filled from separate chicken or walnut records.
