Cooked beef tongue: protein comes with a substantial amount of fat

Simmered beef tongue provides 284 calories, 19.29 grams of protein and 22.3 grams of fat per 100 grams. This is cooked beef tongue, not raw tongue, veal, lamb or a smoked deli product. Use the label for a salted or branded preparation. [1]

Calories in a slice, 3 ounces or 4 ounces

A slice has no fixed weight. A weighed 50 grams supplies 142 calories; the source 3-ounce portion is 85 grams and supplies 241. Using 28.35 grams per ounce, 4 ounces is about 113.4 grams: 322 calories and 21.87 grams of protein. Those figures belong to tongue, not every cut of beef.

Weigh the cooked edible portion. A whole tongue varies in size, and its raw weight is not interchangeable with its cooked weight. Oil used for browning, tortillas, bread and sauces belong in the finished meal’s calculation.

Cooked beef head meat has a separate generic entry. When tongue is served on its own, use the tongue table rather than a head-meat average; distinguish the edible tissues on a mixed plate.

What about vitamin B12 and iron?

The reference reports 3.13 µg vitamin B12 and 2.61 mg iron per 100 grams. These nutrients contribute to the food’s value, but eating tongue is not a substitute for investigating or treating a deficiency. Tongue and liver do not share one interchangeable vitamin profile.

The B12 and cholesterol values for simmered beef kidney also differ from tongue; organ meat is not one interchangeable nutrition entry.

Is beef tongue a lean choice for weight loss?

No: its 22.3 grams of fat per 100 grams makes it a fattier choice. A measured portion can still fit a meal. The same amount has 132 mg cholesterol; follow any individual restriction you have been given instead of treating one weekly allowance as universal. Add broccoli or another vegetable for variety, without assuming it cancels the meat’s fat or cholesterol.

How long can cooked tongue stay in the fridge?

Divide cooked meat into shallow containers and refrigerate within two hours, or one hour above 32°C (90°F). Cooked meat kept at 4°C (40°F) or below is generally used within 3–4 days. Refrigeration does not undo unsafe time spent on the table. [2]
