Pastry, filling and sauce count together

Dr. Oetker’s Turkish 305 g profiterole kit, prepared as directed, provides 199 calories per 100 g including the cream filling and sauce. A weighed 75 g portion supplies 149 calories, 18.75 g carbohydrate and 12.75 g sugars. A 150 g portion supplies 299 calories and 25.5 g sugars.

One profiterole does not have a universal weight: the pastry size, filling and sauce can all vary. If the sauced amount on your plate weighs 45 g, it supplies 90 calories. The same panel should not be used for empty pastry shells alone.

The kit’s standard sauce is already included in the 199 kcal value. If you add 20 g separately prepared chocolate sauce to 75 g dessert, the total is about 177 kcal. Without that extra sauce, do not add its 28.2 kcal again.

The separate filled-éclair recipe reference gives about 179 calories for the same 75 g, compared with about 149 for this profiterole. Pastry, filling and chocolate can appear in both desserts without making their nutrition tables interchangeable.

The three sachets do different jobs

The box contains 70 g flour mixture, 112 g cream mixture and 123 g sauce mixture. The dough takes 2 eggs, 50 ml water, 25 ml milk and 50 ml oil. Unlike some traditional recipes, this kit’s dough is not precooked on the hob. After mixing, place small portions on the tray and bake for about 25–30 minutes at the pack’s specified oven setting.

The cream uses 400 ml cold milk, while the sauce uses 500 ml milk. Fill the cooled pastries with cream and pour the cooked, cooled chocolate sauce over them just before serving. Adding sauce earlier changes how crisp the pastry stays.

305 g describes the dry kit

The box weight excludes the eggs, milk, water and oil you add. Multiplying 305 g by the prepared-dessert value therefore does not calculate the whole recipe. The pack suggests roughly 25–30 pastry pieces, but their finished weights are not necessarily equal. To calculate your full batch, use the actual ingredients and the weight of the finished dessert.

The mixture contains wheat and milk ingredients; eggs and milk are added during preparation. Older kits with different pack weights and white-chocolate versions do not necessarily share this nutrition panel.

Carte d’Or profiterole ice cream is a separate frozen product. Its 800 ml tub and ice-cream panel do not describe the pastry, cream and sauce dessert prepared here.

Source note: the 305 g pack’s prepared-product panel reports 199 calories, 25 g carbohydrate, 4.7 g protein and 8.4 g fat per 100 g, with 0.27 g salt. Finished batch weight and individual pastry weights were not inferred. Fibre and undeclared micronutrients remain unknown.
