A soup with bulgur dumplings

This sour soup example contains bulgur dumplings with a yogurt and lemon dressing. A 200 g serving provides about 286 kcal, 49.16 g carbohydrate and 10.23 g protein. A smaller 150 g portion provides about 215 kcal. Bowl volume alone does not fix the portion: the balance of dumplings and broth matters.

What gives the soup its sour taste?

In the source recipe, small dumplings made with bulgur, onion, egg white and flour cook in stock. Yogurt and lemon form the sour dressing. Using meat stock does not mean that the dumplings contain minced meat. Rice-based sour meatball soup and Turkish yogurt-and-rice soup are different preparations.

Yogurt-thickened beef soup contains pieces of meat; 200 g of that reference provides about 141 kcal. A yogurt dressing does not establish the same grain, meat and water proportions in both bowls.

Count what you serve alongside it

The dumplings contribute carbohydrate, so this is more than a cup of broth. Bread served alongside it adds to the meal, and an extra drizzle of oil adds to the recipe's existing fat. Making the soup thinner can also reduce the proportion of dumplings in a weighed 200 g serving.
